Ingredients
- Red lentils - 100 grams
- Potato - 1 medium, boiled and mashed
- Carrot - 1 medium, grated
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped (adjust to taste)
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Fresh coriander leaves - 2 tablespoons, chopped
- Besan (gram flour) - 2 tablespoons
- Oil - for grilling
- Coconut milk - 200 ml
- Tomato puree - 100 grams
- Turmeric powder - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the red lentils under cold water and soak them in water for 30 minutes. Drain and set aside.
- In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion, garlic, ginger, and green chili, and sauté until the onion turns translucent.
- Add the grated carrot, boiled potato, coriander powder, cumin powder, garam masala, and salt to the pan. Cook for another 2-3 minutes, stirring well.
- In a mixing bowl, combine the soaked lentils, cooked vegetable mixture, fresh coriander, and besan. Mix until well combined, then form into small patties or koftas.
- Preheat the grill or barbecue. Thread the koftas onto skewers, brushing them lightly with oil.
- Grill the skewers for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through.
- In a separate pot, heat 1 tablespoon of oil and add the tomato puree, turmeric powder, and coconut milk. Simmer for 5-7 minutes until the sauce thickens slightly.
- Add lemon juice and adjust the seasoning of the curry sauce if necessary.
- Serve the grilled kofta skewers hot with the curry sauce drizzled over or on the side.
