Ingredients

  • Red lentils - 100 grams
  • Potato - 1 medium, boiled and mashed
  • Carrot - 1 medium, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped (adjust to taste)
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Besan (gram flour) - 2 tablespoons
  • Oil - for grilling
  • Coconut milk - 200 ml
  • Tomato puree - 100 grams
  • Turmeric powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water and soak them in water for 30 minutes. Drain and set aside.
  2. In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion, garlic, ginger, and green chili, and sauté until the onion turns translucent.
  3. Add the grated carrot, boiled potato, coriander powder, cumin powder, garam masala, and salt to the pan. Cook for another 2-3 minutes, stirring well.
  4. In a mixing bowl, combine the soaked lentils, cooked vegetable mixture, fresh coriander, and besan. Mix until well combined, then form into small patties or koftas.
  5. Preheat the grill or barbecue. Thread the koftas onto skewers, brushing them lightly with oil.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through.
  7. In a separate pot, heat 1 tablespoon of oil and add the tomato puree, turmeric powder, and coconut milk. Simmer for 5-7 minutes until the sauce thickens slightly.
  8. Add lemon juice and adjust the seasoning of the curry sauce if necessary.
  9. Serve the grilled kofta skewers hot with the curry sauce drizzled over or on the side.
