Ingredients
- Red lentils - 100 grams
- Potato - 1 medium (about 150 grams), boiled and mashed
- Carrot - 1 small (about 50 grams), grated
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - 1/4 teaspoon
- Chickpea flour - 2 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 (vegan)
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Vegan yogurt - 4 tablespoons
- Lemon juice - 1 tablespoon
- Chili powder - 1/4 teaspoon (optional)
Steps
- Rinse the red lentils under cold water and cook them in a pot with 300 ml of water until soft, about 15-20 minutes. Drain and let cool.
- In a large mixing bowl, combine the cooked lentils, mashed potato, grated carrot, chopped onion, minced garlic, grated ginger, cilantro, cumin powder, coriander powder, garam masala, salt, black pepper, and chickpea flour. Mix thoroughly until well combined.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the sauce by mixing vegan yogurt, lemon juice, and chili powder in a small bowl. Adjust seasoning to taste.
- Assemble the burgers by placing a patty on each bun, topping with lettuce, tomato, and cucumber. Drizzle the yogurt sauce over the top and close the buns.
- Serve immediately with your favorite side.
