Kofta Biryani

Ingredients
- Minced chicken or turkey - 300 grams
- Onion - 1 large, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, finely chopped
- Fresh coriander leaves - 2 tablespoons, chopped
- Fresh mint leaves - 2 tablespoons, chopped
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Rice (Basmati) - 200 grams
- Water - 500 ml
- Vegetable oil - 2 tablespoons
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Whole spices (bay leaf, cloves, cardamom) - 3 each
Steps
- In a bowl, mix minced chicken, half of the chopped onion, garlic, ginger, green chili, coriander leaves, mint leaves, garam masala, cumin powder, coriander powder, and salt. Form into small balls (kofta) and set aside.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Fry the koftas until golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add the remaining onion and sauté until translucent. Stir in the yogurt and lemon juice, then add the whole spices (bay leaf, cloves, cardamom) and cook for 2 minutes.
- Add the rice to the pan and stir gently to coat with the spices. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and cook for 15 minutes.
- After 15 minutes, gently place the fried koftas on top of the rice, cover again, and cook for an additional 10 minutes on low heat.
- Remove from heat and let it rest for 5 minutes before serving. Fluff the biryani gently with a fork and serve warm.
