Kofta is a delightful Indian dish made from spiced vegetables and paneer, shaped into balls and cooked in a rich, aromatic gravy. This vegetarian version is not only delicious but also packed with nutrients, making it a perfect dinner option.

Ingredients

  • Grated paneer - 200 grams
  • Boiled and mashed potatoes - 100 grams
  • Finely chopped onion - 1 medium (about 100 grams)
  • Finely chopped green chili - 1 teaspoon
  • Ginger-garlic paste - 1 teaspoon
  • Chopped fresh coriander - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • All-purpose flour - 2 tablespoons
  • Oil for frying - 4 tablespoons
  • Tomato puree - 200 grams
  • Cream - 2 tablespoons
  • Water - 100 ml
  • Spices (bay leaf, cardamom, cinnamon) - for tempering

Steps

  1. In a mixing bowl, combine grated paneer, boiled and mashed potatoes, chopped onion, green chili, ginger-garlic paste, fresh coriander, garam masala, cumin powder, and salt. Mix well to form a dough-like mixture.
  2. Shape the mixture into small balls (about 2.5 cm in diameter), then roll them in all-purpose flour to coat lightly.
  3. Heat oil in a frying pan over medium heat. Fry the kofta balls until golden brown on all sides. Remove and drain on paper towels.
  4. In the same pan, add bay leaf, cardamom, and cinnamon and sauté for a minute. Then add tomato puree and cook for 5-7 minutes until the oil separates.
  5. Add water to the tomato gravy, season with salt, and let it simmer for another 5 minutes.
  6. Gently add the fried kofta balls to the gravy and simmer for an additional 5 minutes to allow the flavors to meld.
  7. Finish with a swirl of cream before serving. Garnish with fresh coriander and serve hot with naan or rice.
