- Grated paneer - 200 grams
- Boiled and mashed potatoes - 100 grams
- Finely chopped onion - 1 medium (about 100 grams)
- Finely chopped green chili - 1 teaspoon
- Ginger-garlic paste - 1 teaspoon
- Chopped fresh coriander - 2 tablespoons
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Salt - to taste
- All-purpose flour - 2 tablespoons
- Oil for frying - 4 tablespoons
- Tomato puree - 200 grams
- Cream - 2 tablespoons
- Water - 100 ml
- Spices (bay leaf, cardamom, cinnamon) - for tempering
Steps
- In a mixing bowl, combine grated paneer, boiled and mashed potatoes, chopped onion, green chili, ginger-garlic paste, fresh coriander, garam masala, cumin powder, and salt. Mix well to form a dough-like mixture.
- Shape the mixture into small balls (about 2.5 cm in diameter), then roll them in all-purpose flour to coat lightly.
- Heat oil in a frying pan over medium heat. Fry the kofta balls until golden brown on all sides. Remove and drain on paper towels.
- In the same pan, add bay leaf, cardamom, and cinnamon and sauté for a minute. Then add tomato puree and cook for 5-7 minutes until the oil separates.
- Add water to the tomato gravy, season with salt, and let it simmer for another 5 minutes.
- Gently add the fried kofta balls to the gravy and simmer for an additional 5 minutes to allow the flavors to meld.
- Finish with a swirl of cream before serving. Garnish with fresh coriander and serve hot with naan or rice.
