Ingredients

  • Fresh fish fillets (like kingfish or mackerel) - 300 grams
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chilies - 2, slit
  • Tomato - 1 medium, chopped
  • Curry leaves - 10 leaves
  • Turmeric powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 tablespoon
  • Coconut milk - 200 ml
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until they are translucent.
  2. Add minced garlic, grated ginger, and slit green chilies to the pan. Sauté for another 2-3 minutes until fragrant.
  3. Stir in the chopped tomato and curry leaves. Cook until the tomatoes are soft and mushy.
  4. Sprinkle in the turmeric powder, red chili powder, and coriander powder. Mix well and cook for 2 minutes to release the spices' flavors.
  5. Add the fresh fish fillets to the pan, gently coating them with the spice mixture. Cook for 3-4 minutes until the fish is slightly cooked.
  6. Pour in the coconut milk and season with salt. Stir gently, ensuring the fish is submerged in the curry.
  7. Cover the pan and let it simmer for about 10-12 minutes until the fish is cooked through and tender.
  8. Finish with a squeeze of lemon juice and garnish with fresh cilantro before serving.
