Khichdi

- Basmati rice - 100 grams
- Moong dal (yellow split lentils) - 50 grams
- Carrot - 1 medium, diced
- Green peas - 50 grams
- Potato - 1 small, diced
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Water - 4 cups
- Ghee (clarified butter) - 1 tablespoon
- Fresh coriander - for garnish
Steps
- Rinse the basmati rice and moong dal under cold water until the water runs clear, then soak them in water for 15 minutes.
- In a deep pot, heat ghee over medium heat and add cumin seeds. Once they start to splutter, add grated ginger and sauté for a minute.
- Add diced carrots, potatoes, and green peas to the pot and cook for 3-4 minutes until slightly softened.
- Drain the soaked rice and dal, then add them to the pot along with turmeric powder, garam masala, and salt. Stir to combine.
- Pour in 4 cups of water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice and lentils are cooked and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with fresh coriander before serving.
