- Whole milk - 400 ml
- Sugar - 50 grams
- Ghee (clarified butter) - 1 tablespoon
- Cardamom pods - 2, crushed
- Chopped almonds - 15 grams
- Chopped pistachios - 15 grams
- Raisins - 10 grams
- Saffron strands - a pinch
- Water - 200 ml
Steps
- Rinse the basmati rice thoroughly under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a saucepan, heat the ghee over medium heat, then add the soaked rice and sauté for 2-3 minutes until the rice is lightly toasted.
- Add 200 ml of water to the saucepan and cook the rice until it absorbs the water and becomes tender, about 8-10 minutes.
- Once the rice is cooked, pour in the whole milk and stir well. Bring the mixture to a gentle simmer over low heat.
- Add the sugar, crushed cardamom pods, and saffron strands to the saucepan, stirring continuously until the sugar dissolves completely.
- Cook the mixture for an additional 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
- Remove from heat and let it cool slightly before serving.
- Garnish the kheer with chopped almonds, pistachios, and raisins before serving.
