Ingredients

  • Basmati rice - 50 grams
  • Whole milk - 400 ml
  • Sugar - 50 grams
  • Ghee (clarified butter) - 1 tablespoon
  • Cardamom pods - 2, crushed
  • Chopped almonds - 15 grams
  • Chopped pistachios - 15 grams
  • Raisins - 10 grams
  • Saffron strands - a pinch
  • Water - 200 ml

Steps

  1. Rinse the basmati rice thoroughly under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, heat the ghee over medium heat, then add the soaked rice and sauté for 2-3 minutes until the rice is lightly toasted.
  3. Add 200 ml of water to the saucepan and cook the rice until it absorbs the water and becomes tender, about 8-10 minutes.
  4. Once the rice is cooked, pour in the whole milk and stir well. Bring the mixture to a gentle simmer over low heat.
  5. Add the sugar, crushed cardamom pods, and saffron strands to the saucepan, stirring continuously until the sugar dissolves completely.
  6. Cook the mixture for an additional 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.
  7. Remove from heat and let it cool slightly before serving.
  8. Garnish the kheer with chopped almonds, pistachios, and raisins before serving.
