Ingredients

  • Vermicelli - 100 grams
  • Whole milk - 500 ml
  • Sugar - 80 grams
  • Ghee (clarified butter) - 1 tablespoon
  • Cardamom powder - 1/4 teaspoon
  • Chopped almonds - 2 tablespoons
  • Chopped pistachios - 2 tablespoons
  • Raisins - 2 tablespoons
  • Saffron strands - a pinch
  • Water - 100 ml

Steps

  1. In a pan, heat the ghee over medium heat and add the vermicelli. Roast the vermicelli until golden brown, stirring frequently.
  2. Add the water to the pan and bring it to a boil. Once boiling, reduce the heat and cover the pan, allowing the vermicelli to cook for about 2-3 minutes until the water is absorbed.
  3. Pour in the whole milk and add sugar, stirring well to combine. Increase the heat to medium and bring the mixture to a simmer.
  4. Add the cardamom powder, saffron strands, and raisins to the mixture. Cook for an additional 10-15 minutes, stirring occasionally, until the kheer thickens to your desired consistency.
  5. Once done, remove from heat and let it cool slightly. Serve warm or chilled, garnished with chopped almonds and pistachios.
