- Vermicelli - 100 grams
- Whole milk - 500 ml
- Sugar - 80 grams
- Ghee (clarified butter) - 1 tablespoon
- Cardamom powder - 1/4 teaspoon
- Chopped almonds - 2 tablespoons
- Chopped pistachios - 2 tablespoons
- Raisins - 2 tablespoons
- Saffron strands - a pinch
- Water - 100 ml
Steps
- In a pan, heat the ghee over medium heat and add the vermicelli. Roast the vermicelli until golden brown, stirring frequently.
- Add the water to the pan and bring it to a boil. Once boiling, reduce the heat and cover the pan, allowing the vermicelli to cook for about 2-3 minutes until the water is absorbed.
- Pour in the whole milk and add sugar, stirring well to combine. Increase the heat to medium and bring the mixture to a simmer.
- Add the cardamom powder, saffron strands, and raisins to the mixture. Cook for an additional 10-15 minutes, stirring occasionally, until the kheer thickens to your desired consistency.
- Once done, remove from heat and let it cool slightly. Serve warm or chilled, garnished with chopped almonds and pistachios.
