Ingredients
- All-purpose flour - 100 grams
- Ghee - 30 grams
- Water - 50 ml
- Milk - 200 ml
- Sugar - 50 grams
- Basmati rice - 30 grams
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (cashews, almonds) - 30 grams
- Raisins - 10 grams
- Salt - a pinch
- Oil for frying - 500 ml
Steps
- In a mixing bowl, combine the all-purpose flour, ghee, and a pinch of salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
- Rinse the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a saucepan, bring the milk to a boil. Add the soaked rice, sugar, and cardamom powder. Cook on low heat until the rice is tender and the mixture thickens, about 15-20 minutes. Stir frequently to prevent sticking.
- Once the kheer is ready, fold in the chopped nuts and raisins. Remove from heat and let it cool down.
- Divide the dough into small balls and roll each ball out into thin circles (about 10 cm in diameter). Cut each circle in half to form two semi-circles.
- Take a semi-circle, create a cone shape by folding and sealing the edges with a little water. Fill the cone with a spoonful of the kheer mixture and seal the open edge tightly to form a triangle samosa shape.
- Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels. Serve warm.
