- Basmati rice - 50 grams
- Whole milk - 500 ml
- Sugar - 60 grams
- Cardamom pods - 2 (crushed)
- Ghee - 1 tablespoon
- Chopped almonds - 15 grams
- Chopped cashews - 15 grams
- Raisins - 15 grams
- Saffron strands - a pinch (optional)
- Water - 200 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a saucepan, heat the ghee over medium heat and add the chopped almonds and cashews. Fry until golden brown, then add the raisins and fry for an additional 1-2 minutes. Remove the nuts and set aside.
- Drain the soaked rice and add it to the saucepan. Stir-fry the rice in the ghee for about 2-3 minutes until slightly toasted.
- Pour in the milk and water, add the crushed cardamom pods, and bring to a boil. Once boiling, reduce the heat to low and let it simmer, stirring occasionally, for about 15-20 minutes or until the rice is cooked and the mixture thickens.
- Add sugar and saffron strands (if using) to the pudding. Stir well and cook for an additional 5 minutes.
- Remove from heat and let it cool slightly. Serve warm or chilled, garnished with the fried nuts.
