- Rice Flour - 100 grams
- Coconut Milk - 200 ml
- Jaggery (grated) - 50 grams
- Cardamom Powder - 1/2 teaspoon
- Salt - a pinch
- Water - 100 ml (for the puris)
- Oil (for frying) - as needed
- Chopped Nuts (almonds, cashews) - 2 tablespoons
- Raisins - 1 tablespoon
Steps
- In a mixing bowl, combine rice flour, salt, and water to form a smooth dough. Set aside for 10 minutes.
- In a saucepan, heat coconut milk over medium heat, add grated jaggery, and stir until dissolved.
- Add cardamom powder, chopped nuts, and raisins to the coconut milk mixture. Simmer for 5-7 minutes until slightly thickened. Remove from heat.
- Divide the dough into small balls and roll them into thin circles (puris).
- Heat oil in a frying pan over medium heat. Fry the puris until they puff up and turn golden brown. Drain on paper towels.
- Serve the crispy puris warm, drizzled with the coconut kheer mixture.
