Ingredients

  • Rice Flour - 100 grams
  • Coconut Milk - 200 ml
  • Jaggery (grated) - 50 grams
  • Cardamom Powder - 1/2 teaspoon
  • Salt - a pinch
  • Water - 100 ml (for the puris)
  • Oil (for frying) - as needed
  • Chopped Nuts (almonds, cashews) - 2 tablespoons
  • Raisins - 1 tablespoon

Steps

  1. In a mixing bowl, combine rice flour, salt, and water to form a smooth dough. Set aside for 10 minutes.
  2. In a saucepan, heat coconut milk over medium heat, add grated jaggery, and stir until dissolved.
  3. Add cardamom powder, chopped nuts, and raisins to the coconut milk mixture. Simmer for 5-7 minutes until slightly thickened. Remove from heat.
  4. Divide the dough into small balls and roll them into thin circles (puris).
  5. Heat oil in a frying pan over medium heat. Fry the puris until they puff up and turn golden brown. Drain on paper towels.
  6. Serve the crispy puris warm, drizzled with the coconut kheer mixture.
