Ingredients
- Basmati rice - 1/4 cup (50g)
- Full-fat milk - 2 cups (500ml)
- Sugar - 1/4 cup (50g)
- Ghee (clarified butter) - 1 tablespoon (15g)
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (almonds, pistachios) - 2 tablespoons (30g)
- Saffron strands - a pinch
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a heavy-bottomed pan, heat the ghee over medium heat. Add the soaked rice (drained) and sauté for 2-3 minutes until slightly translucent.
- Pour in the full-fat milk and bring it to a gentle boil. Lower the heat and let it simmer for about 20 minutes, stirring occasionally to prevent sticking.
- Add sugar, cardamom powder, and a pinch of salt to the rice mixture. Continue cooking for another 5-10 minutes until the kheer thickens to your desired consistency.
- In a separate small pan, melt a little ghee and add the chopped nuts. Sauté until they are golden brown, then add them to the kheer along with saffron strands and vanilla extract. Mix well.
- Serve warm or chilled in bowls, garnished with additional nuts if desired.
