Ingredients

  • Basmati rice - 1/4 cup (50g)
  • Full-fat milk - 2 cups (500ml)
  • Sugar - 1/4 cup (50g)
  • Ghee (clarified butter) - 1 tablespoon (15g)
  • Cardamom powder - 1/4 teaspoon
  • Chopped nuts (almonds, pistachios) - 2 tablespoons (30g)
  • Saffron strands - a pinch
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a heavy-bottomed pan, heat the ghee over medium heat. Add the soaked rice (drained) and sauté for 2-3 minutes until slightly translucent.
  3. Pour in the full-fat milk and bring it to a gentle boil. Lower the heat and let it simmer for about 20 minutes, stirring occasionally to prevent sticking.
  4. Add sugar, cardamom powder, and a pinch of salt to the rice mixture. Continue cooking for another 5-10 minutes until the kheer thickens to your desired consistency.
  5. In a separate small pan, melt a little ghee and add the chopped nuts. Sauté until they are golden brown, then add them to the kheer along with saffron strands and vanilla extract. Mix well.
  6. Serve warm or chilled in bowls, garnished with additional nuts if desired.
