Ingredients

  • All-purpose flour - 100 grams
  • Semolina - 50 grams
  • Ghee - 30 grams
  • Water - 60 ml
  • Salt - 1/4 teaspoon
  • Chopped nuts (cashews, almonds) - 30 grams
  • Jaggery - 100 grams
  • Milk - 250 ml
  • Rice - 30 grams
  • Cardamom powder - 1/2 teaspoon
  • Saffron strands - a pinch
  • Sugar - 1 tablespoon
  • Oil for frying - 200 ml

Steps

  1. In a mixing bowl, combine all-purpose flour, semolina, ghee, salt, and water to form a soft dough. Cover and let it rest for 30 minutes.
  2. In a saucepan, bring milk to a boil. Add washed rice and cook on low heat until the rice is soft and the mixture thickens.
  3. Stir in jaggery, cardamom powder, chopped nuts, and saffron strands into the kheer mixture. Cook for an additional 5 minutes, then set aside to cool.
  4. Divide the dough into small balls and roll each ball into a small circle. Place a spoonful of the kheer filling in the center and fold the edges to seal, forming a kachori.
  5. Heat oil in a deep pan over medium heat. Fry the kachoris until golden brown and crispy on both sides. Remove and drain on paper towels.
  6. Serve warm or at room temperature, garnished with additional chopped nuts and a drizzle of syrup if desired.
