- All-purpose flour - 100 grams
- Semolina - 50 grams
- Ghee - 30 grams
- Water - 60 ml
- Salt - 1/4 teaspoon
- Chopped nuts (cashews, almonds) - 30 grams
- Jaggery - 100 grams
- Milk - 250 ml
- Rice - 30 grams
- Cardamom powder - 1/2 teaspoon
- Saffron strands - a pinch
- Sugar - 1 tablespoon
- Oil for frying - 200 ml
Steps
- In a mixing bowl, combine all-purpose flour, semolina, ghee, salt, and water to form a soft dough. Cover and let it rest for 30 minutes.
- In a saucepan, bring milk to a boil. Add washed rice and cook on low heat until the rice is soft and the mixture thickens.
- Stir in jaggery, cardamom powder, chopped nuts, and saffron strands into the kheer mixture. Cook for an additional 5 minutes, then set aside to cool.
- Divide the dough into small balls and roll each ball into a small circle. Place a spoonful of the kheer filling in the center and fold the edges to seal, forming a kachori.
- Heat oil in a deep pan over medium heat. Fry the kachoris until golden brown and crispy on both sides. Remove and drain on paper towels.
- Serve warm or at room temperature, garnished with additional chopped nuts and a drizzle of syrup if desired.
