Ingredients

  • Basmati rice - 50 grams
  • Whole milk - 500 ml
  • Sugar - 3 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Almonds - 10 grams, chopped
  • Cashews - 10 grams, chopped
  • Raisins - 10 grams
  • Saffron strands - a pinch
  • Rose water - 1 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a heavy-bottomed pot, bring the whole milk to a gentle boil over medium heat.
  3. Drain the soaked rice and add it to the boiling milk. Stir well and reduce the heat to low.
  4. Cook the rice in the milk for about 20 minutes, stirring occasionally to prevent sticking, until the rice is soft and the mixture thickens.
  5. Add the sugar, cardamom powder, and a pinch of salt, stirring until the sugar dissolves.
  6. In a small bowl, soak the saffron strands in a tablespoon of warm milk for 5 minutes, then add it to the kheer.
  7. Stir in the rose water, and mix well. Cook for an additional 2-3 minutes to combine the flavors.
  8. Remove from heat and let it cool slightly. Serve warm or chilled, garnished with chopped almonds, cashews, and raisins.
