- Basmati rice - 50 grams
- Whole milk - 500 ml
- Sugar - 3 tablespoons
- Cardamom powder - 1/4 teaspoon
- Almonds - 10 grams, chopped
- Cashews - 10 grams, chopped
- Raisins - 10 grams
- Saffron strands - a pinch
- Rose water - 1 teaspoon
- Salt - a pinch
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a heavy-bottomed pot, bring the whole milk to a gentle boil over medium heat.
- Drain the soaked rice and add it to the boiling milk. Stir well and reduce the heat to low.
- Cook the rice in the milk for about 20 minutes, stirring occasionally to prevent sticking, until the rice is soft and the mixture thickens.
- Add the sugar, cardamom powder, and a pinch of salt, stirring until the sugar dissolves.
- In a small bowl, soak the saffron strands in a tablespoon of warm milk for 5 minutes, then add it to the kheer.
- Stir in the rose water, and mix well. Cook for an additional 2-3 minutes to combine the flavors.
- Remove from heat and let it cool slightly. Serve warm or chilled, garnished with chopped almonds, cashews, and raisins.
