- Whole milk - 500 milliliters
- Sugar - 50 grams

- Ghee - 1 tablespoon
- Almonds - 20 grams, sliced
- Pistachios - 20 grams, chopped
- Rose water - 1 teaspoon
- Raisins - 20 grams
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a heavy-bottomed pot, heat ghee over medium heat and add the crushed cardamom pods. Sauté for a minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring well to coat the rice with ghee and cardamom.
- Pour in the whole milk and bring to a gentle boil, then reduce the heat to low and simmer for 15-20 minutes, stirring occasionally to prevent sticking.
- Add the sugar, saffron, and rose water to the rice mixture, stirring until the sugar dissolves and the kheer thickens to a creamy consistency.
- In a separate pan, lightly toast the almonds, pistachios, and raisins until golden brown, then add them to the kheer, reserving a few for garnish.
- Remove from heat and let the kheer biryani sit covered for 5-10 minutes to allow the flavors to meld.
- Serve warm or chilled, garnished with the reserved nuts.
