Ingredients

  • Basmati rice - 50 grams
  • Milk - 500 ml
  • Sugar - 50 grams
  • Cardamom powder - 1/2 teaspoon
  • Saffron strands - a pinch
  • Ghee - 1 tablespoon
  • Chopped nuts (almonds, pistachios) - 2 tablespoons
  • Water - 250 ml
  • All-purpose flour - 50 grams
  • Yeast - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pan, bring the 500 ml of milk to a boil, then reduce the heat to low and add the soaked rice, sugar, cardamom powder, and saffron strands. Cook for about 20 minutes, stirring occasionally until the rice is soft and the mixture thickens.
  3. In a bowl, mix all-purpose flour, yeast, and salt, then gradually add water to form a soft dough. Cover and let it rise for about 15 minutes.
  4. Divide the dough into small balls and shape them into dumplings.
  5. In a steamer, place the dumplings and steam for about 10 minutes until they are cooked through.
  6. In a separate pan, heat ghee and lightly fry the chopped nuts until they are golden. Add these to the kheer mixture.
  7. Serve the kheer in bowls, topped with the steamed dumplings and extra nuts.
