- Fresh cow's colostrum - 200 ml
- Full-fat milk - 200 ml
- Sugar - 50 grams
- Cardamom powder - 1/2 teaspoon
- Cashews - 15 grams
- Raisins - 15 grams
- Ghee - 1 tablespoon
Steps
- In a saucepan, heat ghee over medium heat and add cashews. Fry until golden brown, then add raisins and fry until they puff up. Remove from the pan and set aside.
- In the same pan, combine the fresh cow's colostrum and full-fat milk. Stir well and bring to a gentle simmer over low heat.
- Add sugar and cardamom powder to the mixture, stirring continuously until the sugar dissolves completely.
- Allow the payasam to simmer for about 10-15 minutes, stirring occasionally until it thickens slightly.
- Once thickened, remove from heat and let it cool for a few minutes. Serve warm or chilled, garnished with the fried cashews and raisins.
