Ingredients

  • Fresh cow's colostrum - 200 ml
  • Full-fat milk - 200 ml
  • Sugar - 50 grams
  • Cardamom powder - 1/2 teaspoon
  • Cashews - 15 grams
  • Raisins - 15 grams
  • Ghee - 1 tablespoon

Steps

  1. In a saucepan, heat ghee over medium heat and add cashews. Fry until golden brown, then add raisins and fry until they puff up. Remove from the pan and set aside.
  2. In the same pan, combine the fresh cow's colostrum and full-fat milk. Stir well and bring to a gentle simmer over low heat.
  3. Add sugar and cardamom powder to the mixture, stirring continuously until the sugar dissolves completely.
  4. Allow the payasam to simmer for about 10-15 minutes, stirring occasionally until it thickens slightly.
  5. Once thickened, remove from heat and let it cool for a few minutes. Serve warm or chilled, garnished with the fried cashews and raisins.
