Ingredients
- Kharwa Rava (finely ground gluten-free semolina) - 100 grams
- Ghee - 50 grams
- Sugar - 80 grams
- Water - 250 ml
- Cardamom powder - 1/2 teaspoon
- Cashews - 10 grams
- Raisins - 10 grams
- Saffron strands - a pinch
- Food color (optional) - a few drops
Steps
- In a pan, heat 50 grams of ghee over medium flame.
- Add 100 grams of kharwa rava and roast it until it turns golden brown and aromatic, stirring continuously to avoid burning.
- In a separate pot, boil 250 ml of water and add 80 grams of sugar. Stir until the sugar dissolves completely.
- Once the rava is roasted, slowly pour in the sugar-water mixture while stirring continuously to prevent lumps from forming.
- Add 1/2 teaspoon of cardamom powder and a pinch of saffron strands. Mix well.
- Reduce the heat to low, cover the pan, and let it cook for about 5-7 minutes until the mixture thickens.
- In the meantime, in a small pan, heat a little ghee and fry 10 grams of cashews and 10 grams of raisins until golden.
- Add the fried nuts and raisins to the kesari and mix well.
- If desired, add a few drops of food color to enhance the appearance and mix until well combined.
- Remove from heat, let it cool slightly, and serve warm.
