Ingredients

  • Rice flour - 1 cup
  • Split yellow moong dal - 1/2 cup
  • Jaggery - 1/2 cup, grated
  • Cardamom powder - 1/2 teaspoon
  • Ghee (clarified butter) - 2 tablespoons
  • Water - 2 cups
  • Pinch of salt

Steps

  1. Rinse the split yellow moong dal thoroughly and soak it in water for about 30 minutes.
  2. In a pot, add the soaked moong dal and 2 cups of water. Cook until the dal is soft and fully cooked, about 15-20 minutes.
  3. Drain any excess water from the dal and mash it well.
  4. In a non-stick pan, add the mashed dal, grated jaggery, and cardamom powder. Cook on low heat until the jaggery melts and the mixture thickens. Stir continuously to prevent sticking. Set aside to cool.
  5. In a mixing bowl, combine the rice flour, a pinch of salt, and 1 tablespoon of ghee. Gradually add water to form a soft dough. Knead gently until smooth.
  6. Divide the dough into two equal portions. Flatten each portion into a small disc.
  7. Place a portion of the sweet dal filling in the center of each disc and fold the edges over to seal. Gently flatten the filled dough into a round shape, being careful not to break the edges.
  8. Heat a tawa or skillet over medium heat and grease it with a little ghee.
  9. Cook each Puran Poli for about 2-3 minutes on each side, adding a little ghee as needed until golden brown.
  10. Serve warm, drizzled with more ghee if desired.
