Ingredients
- Rice flour - 100 grams
- Pineapple (fresh, finely chopped) - 150 grams
- Ghee - 30 grams
- Jaggery (grated) - 50 grams
- Cardamom powder - 1/2 teaspoon
- Water - 250 ml
- Cashews - 15 grams
- Raisins - 15 grams
Steps
- In a pan, heat ghee on medium flame and add cashews and raisins. Fry until golden brown, then remove and set aside.
- In the same pan, add the finely chopped pineapple and sauté for 3-4 minutes until it softens slightly.
- Add grated jaggery to the pan and stir until it melts completely with the pineapple.
- Pour in the water and bring the mixture to a boil.
- Once boiling, reduce the heat to low and gradually add the rice flour, stirring constantly to prevent lumps.
- Add cardamom powder and mix well until the mixture thickens and starts to leave the sides of the pan.
- Fold in the fried cashews and raisins, mixing evenly.
- Remove from heat and let it cool slightly before serving.
