Ingredients

  • Roasted rice flour - 100 grams
  • Jaggery (grated) - 75 grams
  • Full-fat milk - 100 ml
  • Ghee (clarified butter) - 1 tablespoon
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds and pistachios) - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a non-stick pan, heat the ghee over medium heat until melted.
  2. Add the roasted rice flour to the pan and sauté it for about 5 minutes, stirring continuously until it turns slightly golden and aromatic.
  3. Add the grated jaggery and milk to the pan, stirring continuously until the jaggery completely dissolves.
  4. Add the cardamom powder and salt, and mix well until the mixture thickens and starts to leave the sides of the pan.
  5. Remove the mixture from heat and let it cool slightly until it is safe to handle.
  6. Grease your palms with a little ghee and shape the mixture into small round pedas.
  7. Roll the pedas in chopped nuts for added texture and garnish.
  8. Allow the pedas to cool completely before serving.
