Ingredients

  • Chickpea flour (besan) - 100 grams
  • Ghee (clarified butter) - 80 grams
  • Jaggery (grated) - 75 grams
  • Water - 100 milliliters
  • Cardamom powder - 1/4 teaspoon
  • Chopped nuts (cashews or almonds) - 20 grams

Steps

  1. In a saucepan, add the jaggery and water. Heat over medium flame until the jaggery dissolves completely, then bring it to a one-string consistency (about 5-7 minutes).
  2. In a separate pan, heat the ghee on low flame. Once hot, add the chickpea flour and roast it, stirring continuously, until it turns golden brown and aromatic (about 10-12 minutes).
  3. Slowly pour the jaggery syrup into the roasted chickpea flour mixture, stirring continuously to avoid lumps.
  4. Add the cardamom powder and continue stirring until the mixture thickens and starts to leave the sides of the pan (about 5-7 minutes).
  5. Grease a small tray or plate with ghee and pour the mixture into it, spreading it evenly.
  6. Sprinkle the chopped nuts on top and press them gently into the mixture.
  7. Let it cool for about 10-15 minutes, then cut into squares or diamonds and serve.
