Ingredients

  • Basmati rice - 1/4 cup (50g)
  • Water - 2 cups (500ml)
  • Coconut milk - 1/2 cup (120ml)
  • Jaggery - 1/4 cup (50g), grated
  • Cardamom powder - 1/4 teaspoon
  • Salt - a pinch
  • Chopped nuts (cashews, almonds) - 2 tablespoons
  • Raisins - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt.
  3. Reduce the heat to low, cover the saucepan, and let the rice simmer for about 15 minutes until it absorbs all the water and becomes soft.
  4. Add the coconut milk and grated jaggery to the cooked rice. Stir well to combine and cook for an additional 5 minutes on low heat until the mixture thickens slightly.
  5. Stir in the cardamom powder, chopped nuts, and raisins. Cook for another 2 minutes to allow the flavors to meld.
  6. Remove from heat and let it cool slightly before serving warm or chilled.
