- Basmati rice - 1/4 cup (50g)
- Water - 2 cups (500ml)
- Coconut milk - 1/2 cup (120ml)
- Jaggery - 1/4 cup (50g), grated
- Cardamom powder - 1/4 teaspoon
- Salt - a pinch
- Chopped nuts (cashews, almonds) - 2 tablespoons
- Raisins - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt.
- Reduce the heat to low, cover the saucepan, and let the rice simmer for about 15 minutes until it absorbs all the water and becomes soft.
- Add the coconut milk and grated jaggery to the cooked rice. Stir well to combine and cook for an additional 5 minutes on low heat until the mixture thickens slightly.
- Stir in the cardamom powder, chopped nuts, and raisins. Cook for another 2 minutes to allow the flavors to meld.
- Remove from heat and let it cool slightly before serving warm or chilled.
