Ingredients

  • Full-fat milk - 500 ml
  • Sugar - 80 grams
  • Khoya (dried milk) - 100 grams
  • Saffron strands - 1/4 teaspoon
  • Pistachios (finely chopped) - 30 grams
  • Cardamom powder - 1/2 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. In a small bowl, soak the saffron strands in 1 tablespoon of warm milk and set aside for 10 minutes.
  2. In a saucepan, heat the full-fat milk over medium heat until it comes to a gentle boil, stirring frequently to prevent burning.
  3. Reduce the heat and add the sugar, khoya, and the soaked saffron milk to the boiling milk, stirring continuously until the sugar and khoya are fully dissolved.
  4. In a separate bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, then add this mixture to the milk mixture while stirring continuously for about 5-7 minutes until the mixture thickens slightly.
  5. Add cardamom powder and chopped pistachios to the thickened kulfi base, mixing well.
  6. Remove from heat and allow the mixture to cool to room temperature.
  7. Once cooled, pour the mixture into kulfi molds or small cups, cover with lids or plastic wrap, and freeze for at least 6 hours or overnight until fully set.
  8. To serve, remove the kulfi from the molds by running under warm water for a few seconds, then enjoy your Kharwa Kesar Pista Kulfi.
