- Full-fat milk - 500 ml
- Sugar - 80 grams
- Khoya (dried milk) - 100 grams
- Saffron strands - 1/4 teaspoon
- Pistachios (finely chopped) - 30 grams
- Cardamom powder - 1/2 teaspoon
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
Steps
- In a small bowl, soak the saffron strands in 1 tablespoon of warm milk and set aside for 10 minutes.
- In a saucepan, heat the full-fat milk over medium heat until it comes to a gentle boil, stirring frequently to prevent burning.
- Reduce the heat and add the sugar, khoya, and the soaked saffron milk to the boiling milk, stirring continuously until the sugar and khoya are fully dissolved.
- In a separate bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, then add this mixture to the milk mixture while stirring continuously for about 5-7 minutes until the mixture thickens slightly.
- Add cardamom powder and chopped pistachios to the thickened kulfi base, mixing well.
- Remove from heat and allow the mixture to cool to room temperature.
- Once cooled, pour the mixture into kulfi molds or small cups, cover with lids or plastic wrap, and freeze for at least 6 hours or overnight until fully set.
- To serve, remove the kulfi from the molds by running under warm water for a few seconds, then enjoy your Kharwa Kesar Pista Kulfi.
