Ingredients

  • Mixed seasonal vegetables (carrots, beans, peas) - 300 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the olive oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until it turns golden brown.
  3. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another minute until fragrant.
  4. Add the chopped tomato and cook until it softens and releases its juices.
  5. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for 2 minutes.
  6. Add the mixed seasonal vegetables and stir to coat them with the spices.
  7. Cover and cook on low heat for about 10-12 minutes, stirring occasionally, until the vegetables are tender.
  8. Finish off by adding garam masala and mixing well. Cook for another 2 minutes.
  9. Garnish with fresh coriander leaves and serve hot.
