- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Olive oil - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Heat the olive oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until it turns golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another minute until fragrant.
- Add the chopped tomato and cook until it softens and releases its juices.
- Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for 2 minutes.
- Add the mixed seasonal vegetables and stir to coat them with the spices.
- Cover and cook on low heat for about 10-12 minutes, stirring occasionally, until the vegetables are tender.
- Finish off by adding garam masala and mixing well. Cook for another 2 minutes.
- Garnish with fresh coriander leaves and serve hot.
