Ingredients
- Yellow moong dal - 100 grams
- Water - 1 liter
- Spinach - 50 grams, chopped
- Tomato - 1 medium, diced
- Onion - 1 small, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaves - for garnish
Steps
- Rinse the yellow moong dal under running water until the water runs clear.
- In a large pot, add the rinsed moong dal and 1 liter of water. Bring it to a boil over medium heat.
- Once boiling, reduce the heat to low and add turmeric powder, salt, and half of the chopped spinach. Cover and simmer for about 15 minutes or until the dal is soft.
- In a separate pan, heat a teaspoon of oil over medium heat. Add cumin seeds and let them splutter.
- Add onions, ginger, and garlic to the pan and sauté until the onions are translucent.
- Stir in the diced tomato and red chili powder, cooking until the tomatoes soften.
- Combine the sautéed mixture with the cooked dal in the pot. Mix well and adjust the consistency with water if needed.
- Add the remaining spinach and simmer for another 5 minutes.
- Serve hot, garnished with fresh coriander leaves.
