- Basmati rice - 1 cup
- Water - 2 cups
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Carrot - 1 medium, diced
- Green peas - 1/2 cup
- Capsicum (bell pepper) - 1/2 cup, diced
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 15 minutes, then drain.
- In a pot, heat the vegetable oil over medium heat. Add cumin seeds and mustard seeds; let them splutter.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes until fragrant.
- Add the diced carrot, green peas, and capsicum; cook for about 5 minutes until the vegetables are slightly tender.
- Sprinkle in the turmeric powder, garam masala, and salt. Mix well to combine all the spices with the vegetables.
- Add the soaked and drained rice to the pot, stirring gently to coat the rice with the spices and vegetables.
- Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
