Ingredients

  • Whole wheat flour - 200 grams
  • Potato - 150 grams
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Oil - 2 tablespoons (for dough) + oil for frying
  • Water - as needed
  • Fresh coriander leaves - 2 tablespoons, chopped

Steps

  1. Boil the potato until soft, then peel and mash it in a bowl.
  2. Add cumin seeds, turmeric powder, red chili powder, salt, and chopped coriander leaves to the mashed potato, mixing well to combine.
  3. In a separate bowl, mix whole wheat flour and salt. Gradually add 2 tablespoons of oil and enough water to form a soft dough. Knead for about 5 minutes.
  4. Cover the dough with a damp cloth and let it rest for 10 minutes.
  5. Divide the dough into small balls (about the size of a golf ball).
  6. Take one ball and roll it out into a small circle (about 3-4 inches in diameter) on a floured surface.
  7. Place a spoonful of the potato filling in the center of the rolled dough. Gather the edges to seal the filling inside and gently flatten it.
  8. Heat oil in a deep pan for frying. Once hot, carefully slide the stuffed puris into the oil and fry until they puff up and turn golden brown on both sides.
  9. Remove the puris and drain on paper towels. Repeat with the remaining dough and filling.
  10. Serve hot with your choice of chutney or pickle.
