Ingredients

  • Semolina (Sooji) - 100 grams
  • Milk - 400 ml
  • Sugar - 50 grams
  • Ghee (Clarified Butter) - 30 grams
  • Cardamom Powder - 1/2 teaspoon
  • Cashew Nuts - 20 grams
  • Raisins - 20 grams
  • Saffron Strands - a pinch
  • Water - 100 ml

Steps

  1. In a small bowl, soak the saffron strands in 2 tablespoons of warm milk and set aside.
  2. Heat ghee in a non-stick pan over medium heat. Add cashew nuts and raisins, sauté until golden brown, then remove and set aside.
  3. In the same pan, add semolina and roast on low heat until it turns golden and aromatic, about 5-7 minutes.
  4. Gradually add milk and water to the roasted semolina, stirring continuously to avoid lumps.
  5. Add sugar and cardamom powder, and cook until the mixture thickens, about 10 minutes.
  6. Once thickened, add the saffron-infused milk and mix well.
  7. Remove from heat, transfer to serving bowls, and garnish with sautéed cashew nuts and raisins.
  8. Allow the pudding to cool slightly before serving.
