- Semolina (Sooji) - 100 grams
- Milk - 400 ml
- Sugar - 50 grams
- Ghee (Clarified Butter) - 30 grams
- Cardamom Powder - 1/2 teaspoon
- Cashew Nuts - 20 grams
- Raisins - 20 grams
- Saffron Strands - a pinch
- Water - 100 ml
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm milk and set aside.
- Heat ghee in a non-stick pan over medium heat. Add cashew nuts and raisins, sauté until golden brown, then remove and set aside.
- In the same pan, add semolina and roast on low heat until it turns golden and aromatic, about 5-7 minutes.
- Gradually add milk and water to the roasted semolina, stirring continuously to avoid lumps.
- Add sugar and cardamom powder, and cook until the mixture thickens, about 10 minutes.
- Once thickened, add the saffron-infused milk and mix well.
- Remove from heat, transfer to serving bowls, and garnish with sautéed cashew nuts and raisins.
- Allow the pudding to cool slightly before serving.
