Ingredients
- Rice flour - 100 grams
- Jaggery - 50 grams
- Grated coconut - 30 grams
- Water - 200 ml
- Cardamom powder - 1/4 teaspoon
- Salt - a pinch
- Ghee (clarified butter) - 1 tablespoon
Steps
- In a saucepan, heat 200 ml of water with a pinch of salt. Once boiling, gradually add 100 grams of rice flour, stirring continuously to avoid lumps, until a smooth dough forms.
- Remove the dough from the heat and let it cool for a few minutes. Once cool enough to handle, knead it until smooth and pliable.
- In another pan, melt 50 grams of jaggery with a tablespoon of water on low heat. Stir in 30 grams of grated coconut and 1/4 teaspoon of cardamom powder until well combined. Cook for 2-3 minutes until slightly thickened.
- Divide the rice dough into small balls and flatten each ball into a disc. Place a spoonful of the jaggery-coconut filling in the center of each disc and fold it over to create a half-moon shape. Seal the edges by pressing them together.
- Heat a non-stick pan and add 1 tablespoon of ghee. Place the filled pithas in the pan and cook on medium heat for 3-4 minutes on each side until they are golden brown and slightly crisp.
- Serve warm, either as is or with a drizzle of honey if desired.
