- Chickpea flour (besan) - 100 grams
- Ghee - 50 grams
- Powdered sugar - 75 grams
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (almonds and pistachios) - 2 tablespoons
- Milk - 2 tablespoons
- Saffron strands - a pinch
Steps
- In a heavy-bottomed pan, heat the ghee over medium heat.
- Add the chickpea flour and roast it, stirring continuously, until it turns golden brown and gives a nutty aroma (about 8-10 minutes).
- Reduce the heat to low and add the powdered sugar, cardamom powder, and milk, mixing well to combine.
- Continue to cook for another 5 minutes until the mixture thickens and starts to leave the sides of the pan.
- Remove the pan from heat and let it cool slightly.
- Once cool enough to handle, grease your palms with a little ghee and shape the mixture into small round pedas.
- Garnish each peda with chopped nuts and a strand of saffron on top.
- Allow the pedas to cool completely before serving.
