Ingredients

  • Chickpea flour (besan) - 100 grams
  • Ghee - 50 grams
  • Powdered sugar - 75 grams
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds and pistachios) - 2 tablespoons
  • Milk - 2 tablespoons
  • Saffron strands - a pinch

Steps

  1. In a heavy-bottomed pan, heat the ghee over medium heat.
  2. Add the chickpea flour and roast it, stirring continuously, until it turns golden brown and gives a nutty aroma (about 8-10 minutes).
  3. Reduce the heat to low and add the powdered sugar, cardamom powder, and milk, mixing well to combine.
  4. Continue to cook for another 5 minutes until the mixture thickens and starts to leave the sides of the pan.
  5. Remove the pan from heat and let it cool slightly.
  6. Once cool enough to handle, grease your palms with a little ghee and shape the mixture into small round pedas.
  7. Garnish each peda with chopped nuts and a strand of saffron on top.
  8. Allow the pedas to cool completely before serving.
