Ingredients

  • Whole wheat flour - 200 grams
  • Cooked moong dal (yellow lentils) - 100 grams
  • Grated carrot - 50 grams
  • Chopped spinach - 50 grams
  • Chopped onion - 1 small
  • Green chili (finely chopped) - 1
  • Ginger paste - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Water - as needed
  • Ghee or oil - for cooking

Steps

  1. In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead into a soft dough. Cover and let it rest for 15 minutes.
  2. In another bowl, mix the cooked moong dal, grated carrot, chopped spinach, onion, green chili, ginger paste, cumin powder, coriander powder, and salt. Mash the mixture together until well combined.
  3. Divide the dough into equal portions (about 4 balls). Roll one ball into a small circle. Place a portion of the stuffing in the center and fold the edges to seal it.
  4. Gently roll the stuffed ball into a flat disc, being careful not to break the seal. Repeat with the remaining dough and stuffing.
  5. Heat a skillet over medium heat. Place the rolled paratha on the skillet and cook for 2-3 minutes on each side until golden brown, applying ghee or oil as needed.
  6. Serve hot with yogurt or pickle.
