- Whole wheat flour - 200 grams
- Cooked moong dal (yellow lentils) - 100 grams
- Grated carrot - 50 grams
- Chopped spinach - 50 grams
- Chopped onion - 1 small
- Green chili (finely chopped) - 1
- Ginger paste - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Water - as needed
- Ghee or oil - for cooking
Steps
- In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead into a soft dough. Cover and let it rest for 15 minutes.
- In another bowl, mix the cooked moong dal, grated carrot, chopped spinach, onion, green chili, ginger paste, cumin powder, coriander powder, and salt. Mash the mixture together until well combined.
- Divide the dough into equal portions (about 4 balls). Roll one ball into a small circle. Place a portion of the stuffing in the center and fold the edges to seal it.
- Gently roll the stuffed ball into a flat disc, being careful not to break the seal. Repeat with the remaining dough and stuffing.
- Heat a skillet over medium heat. Place the rolled paratha on the skillet and cook for 2-3 minutes on each side until golden brown, applying ghee or oil as needed.
- Serve hot with yogurt or pickle.
