- Mutton (bone-in) - 500 grams
- Onions (finely chopped) - 2 medium (200 grams)
- Tomatoes (chopped) - 1 medium (100 grams)
- Ginger-garlic paste - 1 tablespoon
- Green chilies (slit) - 2
- Yogurt - 100 grams
- Cooking oil - 2 tablespoons
- Salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Water - 300 ml
Steps
- Heat the oil in a heavy-bottomed pot over medium heat. Add the finely chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and slit green chilies, and sauté for another 2 minutes until fragrant.
- Stir in the chopped tomatoes and cook until soft and mushy, about 5-7 minutes.
- Add the mutton pieces to the pot and sauté for 5-7 minutes until they are browned on all sides.
- Mix in the salt, turmeric powder, red chili powder, and coriander powder. Cook for 3 minutes, stirring occasionally.
- Add the yogurt and mix well to coat the mutton. Cook for another 5 minutes to let the meat absorb the flavors.
- Pour in the water, bring it to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes or until the mutton is tender.
- Once cooked, sprinkle garam masala and chopped cilantro over the top, and give it a gentle stir.
- Serve hot with steamed rice or Indian bread.
