Ingredients

  • Mutton (bone-in) - 500 grams
  • Onions (finely chopped) - 2 medium (200 grams)
  • Tomatoes (chopped) - 1 medium (100 grams)
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies (slit) - 2
  • Yogurt - 100 grams
  • Cooking oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Water - 300 ml

Steps

  1. Heat the oil in a heavy-bottomed pot over medium heat. Add the finely chopped onions and sauté until golden brown.
  2. Add the ginger-garlic paste and slit green chilies, and sauté for another 2 minutes until fragrant.
  3. Stir in the chopped tomatoes and cook until soft and mushy, about 5-7 minutes.
  4. Add the mutton pieces to the pot and sauté for 5-7 minutes until they are browned on all sides.
  5. Mix in the salt, turmeric powder, red chili powder, and coriander powder. Cook for 3 minutes, stirring occasionally.
  6. Add the yogurt and mix well to coat the mutton. Cook for another 5 minutes to let the meat absorb the flavors.
  7. Pour in the water, bring it to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes or until the mutton is tender.
  8. Once cooked, sprinkle garam masala and chopped cilantro over the top, and give it a gentle stir.
  9. Serve hot with steamed rice or Indian bread.
