Ingredients
- Roasted chickpea flour (besan) - 50 grams
- Full-fat milk - 500 ml
- Sugar - 40 grams
- Cardamom powder - 1/2 teaspoon
- Ghee (clarified butter) - 1 tablespoon
- Chopped nuts (almonds, cashews) - 30 grams
- Raisins - 15 grams
- Saffron strands - a pinch
- Water - 100 ml
Steps
- In a pan, heat 1 tablespoon of ghee on medium heat. Add the roasted chickpea flour and roast it for 5-7 minutes until it turns golden brown and aromatic.
- In a separate pot, bring 500 ml of full-fat milk and 100 ml of water to a boil. Once boiling, reduce the heat to low.
- Add the roasted chickpea flour to the boiling milk, stirring continuously to avoid lumps. Cook on low heat for about 10 minutes until the mixture thickens.
- Stir in 40 grams of sugar, 1/2 teaspoon of cardamom powder, and a pinch of saffron strands. Mix well and cook for an additional 5 minutes.
- In the last minute of cooking, add chopped nuts and raisins, reserving some for garnish. Mix thoroughly.
- Remove from heat and let it cool slightly before serving. Garnish with the reserved nuts and raisins.
