Ingredients

  • Roasted chickpea flour (besan) - 50 grams
  • Full-fat milk - 500 ml
  • Sugar - 40 grams
  • Cardamom powder - 1/2 teaspoon
  • Ghee (clarified butter) - 1 tablespoon
  • Chopped nuts (almonds, cashews) - 30 grams
  • Raisins - 15 grams
  • Saffron strands - a pinch
  • Water - 100 ml

Steps

  1. In a pan, heat 1 tablespoon of ghee on medium heat. Add the roasted chickpea flour and roast it for 5-7 minutes until it turns golden brown and aromatic.
  2. In a separate pot, bring 500 ml of full-fat milk and 100 ml of water to a boil. Once boiling, reduce the heat to low.
  3. Add the roasted chickpea flour to the boiling milk, stirring continuously to avoid lumps. Cook on low heat for about 10 minutes until the mixture thickens.
  4. Stir in 40 grams of sugar, 1/2 teaspoon of cardamom powder, and a pinch of saffron strands. Mix well and cook for an additional 5 minutes.
  5. In the last minute of cooking, add chopped nuts and raisins, reserving some for garnish. Mix thoroughly.
  6. Remove from heat and let it cool slightly before serving. Garnish with the reserved nuts and raisins.
