Ingredients

  • Cashew nuts - 100 grams
  • Jaggery (grated) - 50 grams
  • Ghee (clarified butter) - 1 tablespoon
  • Cardamom powder - 1/2 teaspoon
  • Salt - a pinch
  • Water - 2 tablespoons
  • Chopped pistachios (for garnish) - 1 tablespoon

Steps

  1. Soak the cashew nuts in water for about 2 hours, then drain and blend them into a smooth paste using a little water if necessary.
  2. In a non-stick pan, combine the grated jaggery and 2 tablespoons of water, and cook over low heat until the jaggery melts completely.
  3. Once the jaggery has melted, add the cashew paste, ghee, cardamom powder, and a pinch of salt. Mix well and cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan (about 10-15 minutes).
  4. Once the mixture is ready, transfer it to a greased plate or tray and spread it evenly with a spatula. Allow it to cool slightly.
  5. While the mixture is still warm, cut it into diamond or square shapes using a sharp knife.
  6. Garnish with chopped pistachios and let it cool completely before serving.
