Ingredients

  • Eggs - 4 large
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chilies - 2, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil - 2 tablespoons

Steps

  1. Hard boil the eggs in a pot of water for 10 minutes. Once done, cool them under running water, peel, and set aside.
  2. In a pan, heat the oil over medium heat. Add the chopped onions and sauté until they turn golden brown.
  3. Add the grated ginger, minced garlic, and slit green chilies to the pan. Sauté for another 2 minutes until fragrant.
  4. Stir in the chopped tomatoes and cook until they soften, about 5 minutes.
  5. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for 2 more minutes.
  6. Cut the boiled eggs in half and gently add them to the masala. Sprinkle garam masala over the top and carefully mix to coat the eggs without breaking them.
  7. Cook for another 2-3 minutes, allowing the flavors to meld.
  8. Garnish with chopped coriander leaves and serve hot with roti or rice.
