- Eggs - 4 large
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chilies - 2, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Oil - 2 tablespoons
Steps
- Hard boil the eggs in a pot of water for 10 minutes. Once done, cool them under running water, peel, and set aside.
- In a pan, heat the oil over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the grated ginger, minced garlic, and slit green chilies to the pan. Sauté for another 2 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften, about 5 minutes.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for 2 more minutes.
- Cut the boiled eggs in half and gently add them to the masala. Sprinkle garam masala over the top and carefully mix to coat the eggs without breaking them.
- Cook for another 2-3 minutes, allowing the flavors to meld.
- Garnish with chopped coriander leaves and serve hot with roti or rice.
