Ingredients

  • Besan (chickpea flour) - 1 cup
  • Water - 1 cup
  • Ginger paste - 1 teaspoon
  • Green chili (finely chopped) - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Eno fruit salt - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Curry leaves - 5-6 leaves
  • Mustard seeds - 1 teaspoon
  • Oil - 1 tablespoon
  • Fresh coriander (chopped) - for garnish

Steps

  1. In a mixing bowl, combine 1 cup of besan, 1 cup of water, ginger paste, green chili, turmeric powder, and salt. Mix well to form a smooth batter.
  2. Let the batter rest for about 10 minutes.
  3. Grease a steaming tray or a round plate with a little oil.
  4. After resting, add 1/2 teaspoon of Eno fruit salt to the batter and mix gently.
  5. Pour the batter into the greased steaming tray and tap gently to even out.
  6. Prepare a steamer or a large pot with water, bringing it to a boil. Place the tray with the batter in the steamer and cover it.
  7. Steam for about 15-20 minutes or until a toothpick inserted comes out clean.
  8. While the dhokla is steaming, heat 1 tablespoon of oil in a small pan, add mustard seeds and curry leaves, and let them crackle.
  9. Once the dhokla is done, remove it from the steamer and drizzle the tempering over the top.
  10. Let it cool for a few minutes, then cut into squares and garnish with fresh coriander before serving.
