- Besan (chickpea flour) - 1 cup
- Water - 1 cup
- Ginger paste - 1 teaspoon
- Green chili (finely chopped) - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Eno fruit salt - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Curry leaves - 5-6 leaves
- Mustard seeds - 1 teaspoon
- Oil - 1 tablespoon
- Fresh coriander (chopped) - for garnish
Steps
- In a mixing bowl, combine 1 cup of besan, 1 cup of water, ginger paste, green chili, turmeric powder, and salt. Mix well to form a smooth batter.
- Let the batter rest for about 10 minutes.
- Grease a steaming tray or a round plate with a little oil.
- After resting, add 1/2 teaspoon of Eno fruit salt to the batter and mix gently.
- Pour the batter into the greased steaming tray and tap gently to even out.
- Prepare a steamer or a large pot with water, bringing it to a boil. Place the tray with the batter in the steamer and cover it.
- Steam for about 15-20 minutes or until a toothpick inserted comes out clean.
- While the dhokla is steaming, heat 1 tablespoon of oil in a small pan, add mustard seeds and curry leaves, and let them crackle.
- Once the dhokla is done, remove it from the steamer and drizzle the tempering over the top.
- Let it cool for a few minutes, then cut into squares and garnish with fresh coriander before serving.
