Ingredients

  • Flattened rice (chura) - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Mustard oil - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Peanuts - 20 grams, roasted

Steps

  1. In a pan, heat mustard oil over medium heat until hot.
  2. Add cumin seeds and let them splutter for a few seconds.
  3. Add finely chopped onions and green chili; sauté until the onions turn translucent.
  4. Stir in the chopped tomatoes and turmeric powder; cook until the tomatoes soften.
  5. Add the flattened rice (chura) and salt to the pan; mix well to evenly coat the chura with the spices.
  6. Cook for 3-4 minutes, stirring occasionally, allowing the chura to crisp slightly.
  7. Remove from heat and stir in chopped coriander leaves, lemon juice, and roasted peanuts.
  8. Serve warm, garnished with additional coriander if desired.
