Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, chopped
  • Carrot - 1 medium, diced
  • Green peas - 1/2 cup
  • Potato - 1 medium, diced
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Coriander powder - 1 teaspoon
  • Fresh coriander leaves - for garnishing

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a medium pot, heat ghee over medium heat. Add cumin seeds and mustard seeds; let them splutter.
  3. Add chopped onion, and sauté until golden brown. Stir in minced garlic, grated ginger, and chopped green chili, cooking for another minute.
  4. Add diced carrot, green peas, and potato to the pot. Sauté for 3-4 minutes until the vegetables are slightly tender.
  5. Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the vegetables with spices.
  6. Add the soaked basmati rice to the pot, followed by 2 cups of water. Bring to a boil, then reduce heat to low, cover, and cook for 15-18 minutes until the rice is fluffy and water is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh coriander leaves and serve hot.
