Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Chaat masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Boiled potatoes - 150 grams, diced
  • Chopped onion - 1 small
  • Chopped tomato - 1 medium
  • Chopped cucumber - 1 small
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Tamarind chutney - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. On a baking sheet, toss the drained chickpeas with olive oil, cumin powder, chaat masala, red chili powder, and salt until evenly coated.
  3. Roast the seasoned chickpeas in the oven for 15-20 minutes, or until they are golden and crispy, tossing halfway through.
  4. While the chickpeas are roasting, prepare the salad by combining the diced boiled potatoes, chopped onion, chopped tomato, chopped cucumber, and fresh coriander leaves in a mixing bowl.
  5. Once the chickpeas are done, let them cool slightly and then add them to the salad mixture.
  6. Drizzle the tamarind chutney and lemon juice over the salad and toss everything together gently to combine.
  7. Serve immediately, garnished with additional coriander if desired.
