- Canned chickpeas - 400 grams, drained and rinsed

- Cumin powder - 1 teaspoon
- Chaat masala - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Boiled potatoes - 150 grams, diced
- Chopped onion - 1 small
- Chopped tomato - 1 medium
- Chopped cucumber - 1 small
- Fresh coriander leaves - 2 tablespoons, chopped
- Tamarind chutney - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- On a baking sheet, toss the drained chickpeas with olive oil, cumin powder, chaat masala, red chili powder, and salt until evenly coated.
- Roast the seasoned chickpeas in the oven for 15-20 minutes, or until they are golden and crispy, tossing halfway through.
- While the chickpeas are roasting, prepare the salad by combining the diced boiled potatoes, chopped onion, chopped tomato, chopped cucumber, and fresh coriander leaves in a mixing bowl.
- Once the chickpeas are done, let them cool slightly and then add them to the salad mixture.
- Drizzle the tamarind chutney and lemon juice over the salad and toss everything together gently to combine.
- Serve immediately, garnished with additional coriander if desired.
