- Potatoes - 400 grams
- Mustard oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- In a pot, add the cubed potatoes and enough water to cover them. Bring to a boil and cook until they are just tender, about 10 minutes. Drain and set aside.
- In a large skillet, heat the mustard oil over medium heat. Once hot, add the cumin seeds and let them sizzle for a few seconds.
- Add the boiled potatoes to the skillet and stir well to coat them with the oil and spices.
- Sprinkle in the turmeric powder, red chili powder, garam masala, and salt. Mix everything well and cook for another 10 minutes, stirring occasionally, until the potatoes are golden and slightly crispy.
- Remove from heat and stir in the chopped coriander leaves and lemon juice.
- Serve hot with rice or gluten-free rotis.
