Ingredients

  • Rice flour - 200 grams
  • Warm water - 150 ml
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Fenugreek leaves (dried) - 1 tablespoon
  • Mustard oil - 1 tablespoon
  • Mixed vegetables (carrot, green beans, potato) - 300 grams
  • Green chili - 1, chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Asafoetida (hing) - a pinch
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine rice flour, salt, turmeric powder, and cumin seeds. Gradually add warm water and knead into a smooth dough. Cover and let it rest for 15 minutes.
  2. While the dough is resting, prepare the vegetable stew. In a pan, heat mustard oil over medium heat. Add minced garlic, grated ginger, and chopped green chili, sautéing until fragrant.
  3. Add the mixed vegetables to the pan and stir well. Sprinkle in dried fenugreek leaves and asafoetida, and sauté for a few more minutes.
  4. Add enough water to cover the vegetables, bring to a boil, then reduce heat and let simmer until the vegetables are tender, about 15 minutes. Adjust seasoning if needed.
  5. Divide the rested dough into equal portions and roll each into a ball. Flatten each ball into a disc about 1/4 inch thick.
  6. Heat a tawa or non-stick pan over medium heat. Cook each puri for about 2-3 minutes on each side until golden brown and slightly puffed up.
  7. Serve the Khar Puri hot with the vegetable stew, garnished with fresh cilantro.
