Khar Puri

- Rice flour - 200 grams
- Warm water - 150 ml
- Salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Fenugreek leaves (dried) - 1 tablespoon
- Mustard oil - 1 tablespoon
- Mixed vegetables (carrot, green beans, potato) - 300 grams
- Green chili - 1, chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Asafoetida (hing) - a pinch
- Fresh cilantro - for garnish
Steps
- In a mixing bowl, combine rice flour, salt, turmeric powder, and cumin seeds. Gradually add warm water and knead into a smooth dough. Cover and let it rest for 15 minutes.
- While the dough is resting, prepare the vegetable stew. In a pan, heat mustard oil over medium heat. Add minced garlic, grated ginger, and chopped green chili, sautéing until fragrant.
- Add the mixed vegetables to the pan and stir well. Sprinkle in dried fenugreek leaves and asafoetida, and sauté for a few more minutes.
- Add enough water to cover the vegetables, bring to a boil, then reduce heat and let simmer until the vegetables are tender, about 15 minutes. Adjust seasoning if needed.
- Divide the rested dough into equal portions and roll each into a ball. Flatten each ball into a disc about 1/4 inch thick.
- Heat a tawa or non-stick pan over medium heat. Cook each puri for about 2-3 minutes on each side until golden brown and slightly puffed up.
- Serve the Khar Puri hot with the vegetable stew, garnished with fresh cilantro.
