Khar

Ingredients

  • Raw papaya - 200 grams, peeled and diced
  • Green chilies - 2, slit
  • Khar (alkaline water) - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Mustard oil - 1 tablespoon
  • Water - 1 cup
  • Fresh coriander leaves - for garnish

Steps

  1. In a pot, add 1 cup of water and bring it to a boil.
  2. Once boiling, add the diced raw papaya and turmeric powder. Cook for about 10 minutes until the papaya is tender.
  3. Stir in the khar and salt to taste. Let it simmer for another 5 minutes.
  4. In a separate pan, heat the mustard oil until it's hot. Add the slit green chilies and sauté for a minute.
  5. Pour the hot mustard oil with chilies over the cooked papaya mixture and stir gently.
  6. Garnish with fresh coriander leaves and serve hot.
