Ingredients

  • Gram flour (besan) - 100 grams
  • Yogurt - 100 grams
  • Water - 200 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green chilies (finely chopped) - 1 teaspoon
  • Coriander leaves (finely chopped) - 2 tablespoons
  • Coconut (grated) - 2 tablespoons
  • Curry leaves - 5-6

Steps

  1. In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, and salt to form a smooth batter.
  2. Heat a non-stick pan over medium heat, pour in the batter, and cook while stirring continuously until it thickens and leaves the sides of the pan (about 8-10 minutes).
  3. Spread the cooked batter evenly on a greased surface or parchment paper and let it cool for a few minutes until it sets.
  4. In a small pan, heat a teaspoon of oil and add mustard seeds, sesame seeds, curry leaves, and chopped green chilies. Once they splutter, turn off the heat.
  5. Spread the tempering mixture over the cooled gram flour sheet, followed by coriander leaves and grated coconut.
  6. Carefully roll the sheet into tight rolls and slice them into bite-sized pieces.
  7. Serve the Khandvi Rolls with green chutney or yogurt dip.
