- Gram flour (besan) - 100 grams
- Yogurt - 100 grams
- Water - 200 ml
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Green chilies (finely chopped) - 1 teaspoon
- Coriander leaves (finely chopped) - 2 tablespoons
- Coconut (grated) - 2 tablespoons
- Curry leaves - 5-6
Steps
- In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, and salt to form a smooth batter.
- Heat a non-stick pan over medium heat, pour in the batter, and cook while stirring continuously until it thickens and leaves the sides of the pan (about 8-10 minutes).
- Spread the cooked batter evenly on a greased surface or parchment paper and let it cool for a few minutes until it sets.
- In a small pan, heat a teaspoon of oil and add mustard seeds, sesame seeds, curry leaves, and chopped green chilies. Once they splutter, turn off the heat.
- Spread the tempering mixture over the cooled gram flour sheet, followed by coriander leaves and grated coconut.
- Carefully roll the sheet into tight rolls and slice them into bite-sized pieces.
- Serve the Khandvi Rolls with green chutney or yogurt dip.
