- Gram flour (besan) - 100 grams
- Water - 300 ml
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Ginger paste - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Coconut (freshly grated) - 2 tablespoons
- Green chili - 1 finely chopped
- Oil - 1 tablespoon
Steps
- In a mixing bowl, combine the gram flour, water, turmeric powder, salt, and ginger paste. Whisk well to form a smooth batter without lumps.
- Transfer the batter to a non-stick pan and cook on medium heat, stirring continuously until it thickens and leaves the sides of the pan (about 8-10 minutes).
- Once thickened, spread the mixture evenly onto a greased flat surface or parchment paper, about 1/4 inch thick, and let it cool for a few minutes.
- Once cooled, cut the mixture into strips (about 2 inches wide) and roll them tightly to form the Khandvi rolls.
- In a small pan, heat oil on low flame and add mustard seeds and curry leaves. Allow them to splutter.
- Pour the tempering over the rolled Khandvi and garnish with freshly grated coconut and chopped green chili.
- Serve the Khandvi warm with green chutney or yogurt.
