- Gram flour (besan) - 100 grams
- Yogurt - 50 grams
- Water - 100 ml
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Ginger paste - 1 teaspoon
- Green chili paste - 1 teaspoon
- Salt - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Cilantro (coriander leaves) - for garnishing
- Lemon juice - 1 tablespoon
- Oil - 1 tablespoon
Steps
- In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, ginger paste, green chili paste, and salt to form a smooth batter.
- Add baking soda to the batter and mix well. Let the batter rest for about 10 minutes.
- Meanwhile, prepare a steamer or a large pot with water and bring it to a boil.
- Grease a 6-inch round cake pan or thali with a little oil.
- Pour the batter into the greased pan and spread it evenly.
- Place the pan in the steamer and cover it. Steam for about 15-20 minutes until a toothpick inserted in the center comes out clean.
- While the dhokla is steaming, heat oil in a small pan, add mustard seeds, and let them splutter. Then add curry leaves and sauté for a few seconds.
- Once the dhokla is done, remove it from the steamer and let it cool for a few minutes. Cut it into squares.
- Drizzle the tempering (mustard seeds and curry leaves) on top of the dhokla, and garnish with cilantro and lemon juice before serving.
