Ingredients

  • Gram flour (besan) - 100 grams
  • Yogurt - 50 grams
  • Water - 100 ml
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Green chili paste - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 10 leaves
  • Cilantro (coriander leaves) - for garnishing
  • Lemon juice - 1 tablespoon
  • Oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, ginger paste, green chili paste, and salt to form a smooth batter.
  2. Add baking soda to the batter and mix well. Let the batter rest for about 10 minutes.
  3. Meanwhile, prepare a steamer or a large pot with water and bring it to a boil.
  4. Grease a 6-inch round cake pan or thali with a little oil.
  5. Pour the batter into the greased pan and spread it evenly.
  6. Place the pan in the steamer and cover it. Steam for about 15-20 minutes until a toothpick inserted in the center comes out clean.
  7. While the dhokla is steaming, heat oil in a small pan, add mustard seeds, and let them splutter. Then add curry leaves and sauté for a few seconds.
  8. Once the dhokla is done, remove it from the steamer and let it cool for a few minutes. Cut it into squares.
  9. Drizzle the tempering (mustard seeds and curry leaves) on top of the dhokla, and garnish with cilantro and lemon juice before serving.
