Ingredients
- Chickpea flour (besan) - 1 cup
- Water - 1 cup
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Green chilies (finely chopped) - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Oil - 2 tablespoons
- Fresh coriander leaves (chopped) - 2 tablespoons
- Coconut (grated) - 2 tablespoons (optional)
Steps
- In a mixing bowl, combine the chickpea flour, turmeric powder, salt, and mix well.
- Add water gradually to the flour mixture, stirring continuously to avoid lumps. The batter should be smooth and of pouring consistency.
- Stir in the lemon juice, finely chopped green chilies, and grated ginger. Mix well and set aside for 10 minutes.
- Grease a steaming tray or a shallow dish with oil and pour the batter into it, spreading it evenly.
- In a small pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter, then add curry leaves and sauté for a few seconds.
- Pour the tempered mustard seeds and curry leaves over the batter in the steaming tray.
- Place the tray in a steamer and steam for about 15-20 minutes, or until a toothpick inserted comes out clean.
- Once done, remove from the steamer and let it cool for a few minutes before cutting it into squares.
- Garnish with chopped fresh coriander leaves and grated coconut if using. Serve warm with chutney or sauce.
