Ingredients

  • Chickpea flour (besan) - 1 cup
  • Water - 1 cup
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Green chilies (finely chopped) - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 10 leaves
  • Oil - 2 tablespoons
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Coconut (grated) - 2 tablespoons (optional)

Steps

  1. In a mixing bowl, combine the chickpea flour, turmeric powder, salt, and mix well.
  2. Add water gradually to the flour mixture, stirring continuously to avoid lumps. The batter should be smooth and of pouring consistency.
  3. Stir in the lemon juice, finely chopped green chilies, and grated ginger. Mix well and set aside for 10 minutes.
  4. Grease a steaming tray or a shallow dish with oil and pour the batter into it, spreading it evenly.
  5. In a small pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter, then add curry leaves and sauté for a few seconds.
  6. Pour the tempered mustard seeds and curry leaves over the batter in the steaming tray.
  7. Place the tray in a steamer and steam for about 15-20 minutes, or until a toothpick inserted comes out clean.
  8. Once done, remove from the steamer and let it cool for a few minutes before cutting it into squares.
  9. Garnish with chopped fresh coriander leaves and grated coconut if using. Serve warm with chutney or sauce.
