Ingredients

  • Zucchini - 300 grams, grated
  • Almond flour - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Cilantro - 2 tablespoons, chopped
  • Green chili - 1, finely chopped
  • Garam masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Oil - for frying (coconut or avocado oil recommended)

Steps

  1. Start by placing the grated zucchini in a clean kitchen towel and squeezing out excess moisture.
  2. In a mixing bowl, combine the dry ingredients: almond flour, grated Parmesan cheese, garam masala, cumin powder, salt, and black pepper.
  3. Add the squeezed zucchini, chopped cilantro, green chili, and the beaten egg to the bowl. Mix until well combined.
  4. Heat oil in a non-stick skillet over medium heat.
  5. Once the oil is hot, take a small portion of the mixture and form it into a patty. Carefully place it in the skillet.
  6. Cook each tikki for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the cooked tikkis from the skillet and place them on a paper towel to absorb excess oil.
