Ingredients

  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cilantro - for garnish, chopped
  • Cooking oil (coconut or ghee) - 2 tablespoons

Steps

  1. Heat the cooking oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add the chopped onion and sauté until it turns golden brown.
  4. Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
  5. Add the chopped tomato and cook until it softens and becomes mushy.
  6. Sprinkle in the turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  7. Add the zucchini, stirring to coat it well with the spice mixture.
  8. Cover and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender.
  9. Sprinkle garam masala over the zucchini sabzi, mix well, and cook for another minute.
