  • Zucchini - 100 grams, sliced
  • Spinach - 100 grams, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Coconut oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat the coconut oil in a large pan or wok over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the grated ginger and minced garlic, sautéing until fragrant (about 30 seconds).
  4. Stir in the chopped cauliflower and cook for about 5 minutes, stirring occasionally.
  5. Add the sliced bell pepper and zucchini, cooking for an additional 3-4 minutes until they begin to soften.
  6. Add the chopped spinach, turmeric powder, red chili powder, salt, and black pepper, stirring well to combine.
